Like I said earlier today, Roadkill Rescue is not a recipe sharing site! But….since my American readers have refrigerators full of Thanksgiving leftovers, I think we’ll make an exception today. I’m sharing delicious ideas for using up all that extra food so it won’t go to waste. (Check out the brownies made from cranberry sauce here if you haven’t already seen them.) Next up is this idea for using up leftover turkey from Tracey’s Culinary Adventures.
Tracey, like many of you, had a lot of turkey leftover from her Thanksgiving feast. Looking for a way to use it up besides turkey sandwiches or soup, she came up with Turkey Cranchiladas. Bonus points: it uses up leftover cranberry sauce, too! Tracey’s post-Thanksgiving version of the enchilada combines turkey with a creamy cheese sauce and a few cranberries baked inside tortillas. “I know the combination of ingredients sounds a little odd - even as a lover of cranberry sauce, I was somewhat skeptical about putting it in a Mexican dish. It really does work though!” Tracey says. It definitely looks delicious, and it got rave reviews from Tracey’s husband-definitely worth a try!
